So, what can you do with leftover chicken chow mein? Of course the obvious answer is simply reheat it and maybe some rice or use those fried noodle things you get from the Chinese take out. But maybe you want a different direction. Here's something you can do with that package of cheap ramen noodles and leftovers. Instead of making the ramen noodles in the usual way and using that salt heavy seasoning packet, soak them in hot water for about 2 minutes. Stir them a bit to loosen them up. In the meantime put a skillet over a medium high heat and add a splash of oil, not too much. Drain the noodles well and toss in the skillet. Add your leftovers. Stir and toss a lot so everything gets mixed together. Add soy sauce, hot oil, beaten egg, whatever you want. Hell, toss in some leftover spaghetti sauce if you want. You be you, booby-boo. Cook until everything is heated through and mixed together well. I topped mine with some sliced scallion greens and sesame seeds.
