Shrimp Gratin

I was surprised that this tasted better than I expected. I even bought a lemon to add because I thought the flavor would be a bit bland. I was totally wrong and never used the lemon.

A couple of tips: Make sure the bread is a little dried out, fresh bread cubes get soggy unless they are on the top and get toasted. If you do use fresh bread cubes, once mixed, arrange them on the top. Shrimp, scallops, cod, lobster, crawfish, or most firm fish work great in this.

1 lb shrimp, or other firm fish, shelled and deveined
4 Tbl butter, melted
1 Tbl butter, unmelted
3 Tbl olive oil
3 cloves garlic, minced
2 scallions, sliced thin
3 or 4 mushrooms, chopped
1/2 cup fresh parsley, chopped
2 cups stale bread, cut into cubes
Salt and Pepper

Preheat oven to 400F

Combine all ingredients in a baking dish, make sure a lot of the bread is at the top of the dish so it gets nice and toasted. Dot the top with the unmelted butter.

Bake for around 20 minutes.
