2 -3 pints strawberries, cleaned and sliced
Toss strawberries with 2 Tbsp sugar and 2 Tbsp water, set aside
Shortcake
3 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
1/4 cup white sugar
1teaspoons salt
3/4 cup butter, cold, cut into small pieces
1 cup buttermilk
Whisk together flour, baking powder, baking soda, and salt.
Cut in butter until crumbly
Add buttermilk, mixing till soft dough forms
Line baking sheet with parchment paper. Drop dough by Tablespoons onto sheet. Bake in a preheated 425 degree oven for 12 minutes or till a toothpick inserted in the center of the shortcake comes out clean
Let cool
Strawberry Whipped Cream
1 1/2 Cups heavy whipping cream
1 small box strawberry Jell-O
Combine ingredients in chilled mixing bowl. Using an electric mixer, whip till stiff peaks form
Layer strawberries, crumbled shortcake, and whipped cream in parfait cups.
