Chocolate Cake

2 c sifted cake flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
½ c shortening
2 c light brown sugar, firmly packed
2 eggs
1 tsp vanilla
4 squares unsweetened chocolate, melted
1 c plus 2 T milk

Preheat oven to 350F.
Grease and flour 2 8-inch round cake pans.

Sift together the first 4 ingredients. In a mixing bowl, stir the shortening and add the sugar gradually until the mixture is fluffy.
Add the eggs, one at a time, until incorporated. Stir in the vanilla and melted chocolate. Now add the sifted dry ingredients, a little at a time,
Alternating with milk; stir only enough to blend well.

Pour into pans.
Bake 30 minutes or until the cake springs back when lightly touched with a fingertip. Remove from the oven and cool in the pans for 5 minutes. Then remove
The cakes from the pans and cool on a rack until completely cooled.

Frost with chocolate or Coffee Frosting. Decorate with grated unsweetened chocolate if desired.
