A great addition to a meal when you want something a little different
1 c milk
6 ½ Tbsp butter
1 tsp salt
1 ¼ c flour
4 eggs
2 oz Gruyere or Compte cheese
Heat oven to 340F
Bring the milk, butter, and salt to a boil in a saucepan.
Add the four and stir mixture for 4-5 minutes on low heat until it leaves the sides of the pan.
(Note: When I did this, it immediately formed into a solid mass.)
Either set aside or transfer mass into a food processor.
Add the eggs and individually mix in.
Cut the cheese into ¼” cubes and work evenly into the mixture.
Form little balls of the dough with a teaspoon and drop onto a greased or silpat lined baking sheet.
Brush with beaten egg yolk and sprinkle with grated cheese.
Bake for 20 – 25 minutes.
