Grilled Chicken Kabobs with Tzatziki Sauce

Another pretty easy favorite. If I had my way it would be made with just chicken thighs, but the wife-monster prefers breasts.

1 1/2 lbs boneless, skinless chicken cut into 1″ pieces
2 T fresh squeezed lemon juice
1 T olive oil
2 tsp za’atar spice mix or dried oregano
1 clove garlic, crushed or minced
1 1/2 tsp salt
Fresh ground black pepper to taste


Mix everything together and place in the refrigerator for anywhere from 2 hours to overnight.


If using wooden skewers, soak in water at least a half an hour to prevent burning.

Prepare the Tzatziki sauce.

Thread chicken onto skewers. (Check out yakitori guy on YouTube for some great instruction on how to skewer and cook chicken.)

Grill over charcoal, medium heat, for 12 – 15 minutes, turning.

Serve with lemon, tzatziki sauce, pitas, lettuce, onion, tomato.
