If you have some tomatoes going bad, don’t toss them. Make soup!
Preheat oven to 400F.
Fill 1/2 a large baking sheet with halved tomatoes.
1/4 with quartered onion, 1/4 with chopped bell pepper.
Place 2 heads of garlic, bisected, in the corner.
Drizzle everything with olive oil and a generous sprinkle of salt.
Bake for 35 – 40 minutes or until everything looks cooked and a bit dehydrated.
Squeeze out the roasted garlic cloves over the tomatoes and discard the paper.
Scape the bottom of the pan then throw everything into a large pot along with a small handful of fresh basil. You can also add some beef or chicken stock if you wish.
With a hand blender, puree everything to a smooth soup.
Finish with some heavy cream and season to taste.
Serve.
