Cauliflower Like Pommes de Terre Mont D’or

You can make this with mashed potatoes in the classic version. But using cauliflower is healthier and will make even cauliflower haters enjoy it.

1 head of cauliflower, cut into pieces
4 eggs
2 cups cheese (cheddar, compte, swiss, whatever you like), divided use
Salt and pepper to taste.

Heat oven to 350F.
Boil a cut up head of cauliflower in salt water until soft.
Drain well and squeeze out excess liquid. Put back in pot.
Turn a medium flame on pot to help dry the vegetable.
Mash cauliflower.
Add 4 eggs, one at a time, mixing in each time.
Add 1 1/2 cup of shredded cheese, mix in. Salt and pepper.
Put in a gratin dish or small baking dish.
Sprinkle remaining cheese on top.
Bake at 350F for 30 minutes.
