Chicken Pitas

Not a “real recipe” but more of a procedure. Still easy and delicious.

Take a chicken breast and slice it through the middle to make two thinner steaks or pound it thinner. Also take some boneless thighs if you like dark meat. Toss them in a ziplock bag with olive oil, minced garlic, fresh lemon juice, oregano, salt and pepper. Maybe toss in a couple spoons of plain yogurt if you have it.
Let it marinate for half an hour or so.

Remove from marinade and toss on a grill for a few minutes. It won’t take very long, maybe 10 minutes total.

Serve with lettuce, tomato, thin sliced raw onion, and tzatziki sauce. Maybe in a pita pocket (but mine kept falling apart).

Served with fingerling potatoes, sliced into wedges, tossed with salt, pepper, and olive oil and roasted at 450 for 25 minutes.
