Chocolate Cream Pie from the Nighthawk Restaurant

For 1 Pie

6 eggs
1 c sugar
Dash salt
1 tsp butter
2 T vanilla flavoring
2 cups Karo white syrup
3 oz unsweetened chocolate chips
10 oz heavy cream, whipped
1 deep dish pie shell, uncooked

For 3 pies

19 eggs
3 c sugar
ΒΌ tsp salt
1 T butter, melted
4 T vanilla flavoring
6 c Karo white syrup
9 oz unsweetened chocolate chips
2 pints heavy cream, whipped
3 uncooked pie shells

In large bowl of mixer, mix eggs, sugar, salt, and vanilla. Beat until firm. Add Karo syrup. Mix well.
Melt butter and chocolate chips in a double boiler. Ad to the first mixture, mixing well until firm.

Pour into 9-inch uncooked pie shells (or 3 if making 3 pies). Cook in a 400F oven about 45 minutes.
Cool in the refrigerator 24 hours.
Before serving, top with whipped cream.
