Ingredients:
1 cup scallions (green onions), finely chopped
¼ cup fresh ginger, finely minced
3 cloves garlic, finely minced
½ cup neutral oil (canola or grapeseed)
2 tablespoons sesame oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sugar
½ teaspoon white pepper
¼ teaspoon salt, or to taste
Preparation:
- Place finely chopped scallions and minced ginger in a heatproof bowl.
- In a small saucepan, heat the neutral oil until just smoking (about 350°F/175°C).
- Carefully pour the hot oil over the scallions and ginger. It will sizzle and cook them slightly.
- Immediately stir in the minced garlic, which will cook in the residual heat.
- Add sesame oil, soy sauce, rice vinegar, sugar, white pepper, and salt. Mix well.
- Let the sauce sit for at least 15 minutes before serving to allow flavors to meld.
- Store in an airtight container in the refrigerator for up to 5 days.
