Ginger Scallion Sauce

Ingredients:
1 cup scallions (green onions), finely chopped
¼ cup fresh ginger, finely minced
3 cloves garlic, finely minced
½ cup neutral oil (canola or grapeseed)
2 tablespoons sesame oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sugar
½ teaspoon white pepper
¼ teaspoon salt, or to taste
Preparation:

  1. Place finely chopped scallions and minced ginger in a heatproof bowl.
  2. In a small saucepan, heat the neutral oil until just smoking (about 350°F/175°C).
  3. Carefully pour the hot oil over the scallions and ginger. It will sizzle and cook them slightly.
  4. Immediately stir in the minced garlic, which will cook in the residual heat.
  5. Add sesame oil, soy sauce, rice vinegar, sugar, white pepper, and salt. Mix well.
  6. Let the sauce sit for at least 15 minutes before serving to allow flavors to meld.
  7. Store in an airtight container in the refrigerator for up to 5 days.
