Use shrimp, firm fleshed fish, salmon, scallops, squid, or whatever you like. Super simple and a wonderful dinner.
12 lg shrimp, peeled and deveined. (or you can use scallops, calamari, or firm fish such as salmon or cod)
1 cup diced bread
1 – 2 cloves of garlic, minced
2 scallions, cut into small rounds
2 – 3 mushrooms, coarsely chopped
2 – 3 Tbls fresh parsley, chopped
3 Tbls butter, melted
2 -3 Tbls olive oil
Salt and Pepper
*Optional: ¼ cup dry white wine, 2 Tbls parmesan, spice blend
Preheat oven to 400F.
Cut shrimp in half cross-section if they are large.
Add all ingredients to a small casserole or gratin dish and stir together. Top with parmesan if desired.
Put in oven and bake for 18 – 20 minutes.
