It’s actually pretty simple to make mayo at home and the taste is amazing. The French have a bistro dish of simply boiled eggs and proper mayonnaise. It’s good on everything.
juice of 1/2 lemon
1 egg
2 tsp dijon mustard
1/2 clove garlic, chopped
1 cup neutral oil (like vegetable oil)
salt and pepper to taste
Find a container that is just a little larger than your immersion blender, or you can put this in a regular blender. You purists can do this with a whisk, but you really don’t want to.
Whisk the egg and lemon juice together in the dish (or whisk and add to blender). Add the other ingredients.
If using an immersion blender, place the blender in the bottom and turn on. Blend until the bottom starts to look like mayonnaise then slowly raise the blender and let the stuff all mix together. If using a regular blender, blend and pulse at the end to get the correct consistancy.
Season with salt and pepper.
