Oven Fried Chicken with Cornflakes

This is one of our favorite Weight Watcher friendly recipes.

Preheat oven to 375 F.
Spray jelly roll pan with non-stick spray. (I lined it with aluminum foil first.)
Stir together 1/3 cup fat-free (or low fat) mayonaise,
1 tablespoon Dijon mustard,
2 garlic cloves (minced),
1/2 teaspoon salt
1 T or more hot pepper sauce (I use Cholula).
Take three 3/4 lb chicken breasts with bone-in, skin removed and cut in half.
Coat with the mayo mixture.
Take about 3/4 cup of corn flakes and crush them in a gallon sized ziplock bag. Toss the chicken pieces a couple at a time in the crumbs and put on the tray. Once they are all breaded, spray with cooking spray and bake for approx 35 min.
