Fresh Apple Cake

1 1/2 cups All-Purpose flour
1 cup sugar
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 cup butter, softened
2 eggs
4 cups finely chopped peeled apples
1 cup All Bran or similar cereal

Frosting
1 tablespoon butter
1 package (3 ounce) softened cream cheese
1 teaspoon vanilla
1 1/2 cups confectioners sugar

Cake:
Stir together the flour, soda, salt, cinnamon, and nutmeg.
Beat the butter and sugar until light and fluffy.
Beat in the eggs.
Stir in the apples, cereal, and flour mixture.
Spread in a greased 9 x 9 x 2 baking pan.
Bake at 350F for about 45 minutes, until a toothpick inserted into the middle of the cake comes out clean.
Cool completely if frosting.

Frosting:
Beat the cream cheese with butter and vanilla.
Add the confectioner’s sugar a little at a time.
If the frosting is too thick, add 1 – 2 teaspoons milk.
Spread on cooled cake.
