An easy, beautiful, and elegant dish. And roasted shallots are absolutely amazing!
1 large roasting chicken, 3 1/2 to 4 lbs
3 cloves of garlic
1 T fresh thyme
2 tsp fresh rosemary
1 T kosher salt
1 T pepper
2 T olive oil
7 or 8 shallots, peeled but whole
3 strips of bacon, cut into dice
1 cup of dry white wine
sprinkle of pepper flakes
drizzle of olive oil, salt and pepper
Preheat oven to 460F
Cut up a large roasting chicken and spread paste over the meat.
Put in baking pan and top with whole shallots, lardons, pepper flakes, salt and pepper, olive oil.
Roast for 20 minutes.
Pour white wine over and return to the oven.
Roast for another 20 - 25 minutes until chicken is golden and shallots are tender and caramelized.
Serve with tossed green salad and fresh baked crusty bread.
