Queen Elizabeth’s Drop Scones

With her death, there has been a lot of focus on the late Queen of England. This was evidently one of her favorites. Much like a thick pancake, but better.

Ingredients
2 eggs
4 Tbl caster sugar (you can either buy caster sugar or whiz some regular sugar in a spice grinder until it is a bit finer)
3 cups milk (Divided 1 1/2 cup milk + 1 1/2 cup milk)
3 cups flour
2 tsp baking soda
3 tsp cream of tartar
2 Tbl butter, melted
Butter or oil for cooking

Beat eggs, sugar and first 1 1/2 cup of milk together.
Add flour and mix well, adding the rest of the milk if needed.
Stir in the baking soda and cream of tartar.
Fold in the melted butter.

Take 1/4 cup of batter and cook on a hot greased skillet or griddle until golden.
They should be small and a bit thick.

Properly served with butter and strawberry jam.
