Yeah, weird name. Is it pasta made from water? Nah.
It’s a fresh pasta sauce you can whip up in no time at all. I think this recipe goes best with Angelhair pasta as the sauce is pretty thin and Angelhair grabs on to sauce nicely.
Take some fresh tomatoes and dice them. Put in a bowl with fresh basil and salt. Mince several cloves of garlic and cook in olive oil. Once garlic starts to brown, hold a colander over the pan and pour the tomato mixture in to let the juice flow into the pan. Cook and mount with butter until the sauce is emulsified and creamy. Add cooked pasta. Serve in bowls topped with the tomatoes and more fresh basil.
