I grabbed a bunch of old recipes from my wife’s parents’ home to record them and keep some of the old style meals still going. This was found on an old yellowed piece of paper and you can’t argue with its simplicity.
1 can Cream of Chicken Soup
1 cup rice
2 cans water
1 Tablespoon margarine
Salt and Pepper
Lay chicken on top. Cook in oven, covered.
400F for 45 minutes.
That’s it.
Note: I would probably replace the water with chicken stock, but that might make it a bit too rich. Also, change the margarine to butter or even olive oil if you wish. Still, looks like a tasty, hearty, and inexpensive meal to make on a weeknight.
