Pork chop experiment deemed a success. A bit of tweaking needed, but April says it is good enough to make again.
2 pork chops, whatever kind you like
1 leek, cleaned, chopped, and hard leaves removed
1 apple, diced small
1 pear, diced small
2 tsp olive oil
2 T butter – divided use
Additional: sugar, maple syrup, applesauce or some kind of sweetener if desired
Cook the leeks in butter until softened and starting to brown. Then transfer to a warm plate and keep warm in the oven.
In the same pan, add a bit of olive oil and place your seasoned pork chops. Brown on one side, flip, and then add the sliced pear and apple. Cook until pork chops are done then transfer them to the plate with the leeks so the juices all combine.
Add butter to the fruit and we decided a bit of sweet was needed. So add some sugar, maple syrup, honey, or even maybe some applesauce.
Roasted sweet potato mashed up and cooked in the remaining butter and served with this is amazeballs
