12 oz. potatoes (any variety will work)
1 tsp salt, divided
1 medium head green cabbage, tough outer leaves removed
2 Tbsp olive oil
1 1/2 to 2 cups heavy cream
2 Tbsp Dijon mustard
2 tsp dried thyme
garlic cloves, minced
1/4 cup grated parmesan cheese
1 to 2 cups chopped ham
Instructions
Preheat oven to 400 degrees.
Place potatoes in a microwave safe bowl and cover potatoes with water. Microwave on High until potatoes are partially cooked. about 4 minutes. Drain potatoes, and set aside.
Meanwhile, stand the cabbage stem side down, and cut it in half through the core. Cut each half into 4 wedges.
Place oil into the bottom of a 9×13 baking dish. Place cabbage wedges in baking dish and season each wedge with salt and pepper. Cook for 10 minutes, remove from oven flip over and cook for another 10 minutes.
Place potatoes and ham around the cabbage.
In a bowl combine cream, Dijon, thyme, garlic, cayenne pepper, and a pinch of salt. Pour over cabbage mixture. Sprinkle with parmesan cheese.
Bake for 20 to 25 minutes.
