Super simple and delicious.
1/2 tsp salt
2 cups full fat yogurt
Sumac, za’tar, herbs, alleppo pepper, or seasoning of your choice
Mix salt into yogurt then pour into a double layer of cheesecloth and put into a fine mesh strainer over a bowl. Place in fridge 2 – 4 days.
Once the texture you like, remove from fridge and roll into ping pong size balls.
Roll in the seasoning of your choice or no seasoning.
Place in a tall container and cover with olive oil. Seal container.
Spread on bread, mix with pickled vegetables, use as a dip, whatever you want.
