Flammkuchen (German Flatbread)

There is argument whether this is German or French. Well, it’s Alsatian so it’s both. Either way it is special.

• 1 flatbread or thin pizza crust
• 1/4 cup crème fraîche or sour cream
• 1/4 cup onions, thinly sliced
• 1/4 cup bacon, chopped and cooked
• 1/4 cup grated Gruyere
• Fresh thyme or rosemary (optional)
• Salt and pepper to taste
Instructions:

  1. Preheat your oven to 400°F .
  2. Spread crème fraîche evenly over the flatbread.
  3. Top with onions, bacon, and grated cheese. Optionally, sprinkle with fresh thyme or rosemary.
  4. Season with salt and pepper.
  5. Place on a sheet pan or pizza stone. Bake for 10-15 minutes or until the edges are crispy and the toppings are golden.
  6. Slice and serve warm.
