Pollo ala Brasa – Peruvian Roasted Chicken

Very easy and delicious roasted chicken. The aji sauces are easy to find and order on the internet.

1 whole chicken, spatchcocked or cut into pieces
4 cloves garlic, minced
1 tablespoon oil
1 tablespoon lime juice
1 tablespoon soy sauce
1 teaspoon aji Amarillo chili paste
1 teaspoon ground cumin
1 teaspoon coriander
1 teaspoon paprika
¼ teaspoon salt
¼ teaspoon pepper
½ teaspoon aji panca chili paste (optional)

Mix ingredients and, in a large bowl or ziplock bag, coat chicken well in marinade. Let sit in the refrigerator at least 1 hour and preferably overnight. The longer it sits, the more flavor it has.
Roast chicken at 450F for 40 minutes or until properly cooked.
