Barbecue Sauce

1 Tblsp oil
3 cloves of garlic, smashed
6 Tblsp concentrated tomato paste
1/2 cup maple syrup
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 Tblsp unseasoned rice wine vinegar
3 tsp Siracha, if you want it spicy
1 Tblsp ketchup

Over medium heat, heat oil and then sauté’ the cloves of garlic for a couple of minutes until they just begin to turn brown and you can smell the garlic.
Add tomato paste and cook, stirring, for probably three minutes until it darkens
and you can smell the cooked tomatoes.
Add the rest of the ingredients and cook for 5 – 10 minutes until it starts to thicken and the aroma fills the kitchen. Remove from heat and let sit at least an hour to let the ingredients get to know each other.
