Grilled Sea Bass with Garlic/Butter Sauce

Okay, if you like grilled fish and the occasional splurge, I have a recipe for you. Actually, this would probably be equally good with swordfish, shark, halibut, or any other firm meaty fish.


Ingredients

Seasoning Mix

1/2 tsp each

paprika, onion powder, garlic powder, sea salt

Combine.


2 T butter

3 cloves garlic, minced

1T parsley, minced

4 filets of sea bass, swordfish, halibut or any firm fish


Combine seasoning ingredients and set aside. In a small saucepan melt the butter and add the garlic and parsley. Cook until garlic softens. You can also just combine everything in a microwave safe dish and zap for 2 minutes.


Heat grill to high.

Season the fish on both sides with the seasoning mix and let sit for 5 minutes for the spices to adhere and sink in a bit.

Oil grill and add fish. Let cook for around 7 minutes and then flip. Brush with the butter mix. Cook another 5 to 7 minutes until the center is hot.

Remove to a plate and drizzle more of the butter over.
