Easy and tasty and a MUST to serve with Chicken Kabobs or Gyros.
3/4 cup plain yogurt
3/4 cup cucumber, peeled, seeded, and chopped small
1 T fresh lemon juice
1/2 T fresh dill, chopped
1/2 T fresh mint, chopped
1/2 tsp kosher salt
Black pepper to taste
Mix everything together and refrigerate at least 1/2 hour.
