Red Cabbage

I admit I’ve never been a huge fan of red cabbage, but this is actually pretty good.
If you like it a bit more sweet/sour, add a touch more vinegar.

1/2 large head red cabbage , about 5-6 cups
1 apple, shredded/grated
1/3 cup apple cider vinegar
3 T water
1/4 cup brown sugar
2 teaspoon salt
1/4 teaspoon black pepper
1 T pickling spices
2 T butter

Core the cabbage and cut into bite size threads.
Put half the cabbage into a heavy pot.
Add the apple then top with remaining cabbage.
In a small bowl, combine the vinegar, sugar, salt, pepper, and spices. Pour over the cabbage.
Top with the butter, cover and bring mixture to a boil.
Reduce heat to a simmer, stir and cook for an hour and a half to two hours, stirring occasionally. Until cabbage is tender enough to your taste.
