Tomato Gratin

A great side dish or could even be a vegetarian main paired with a fresh salad and crusty French bread.

2 medium tomatoes, cored and sliced about 1/4″ thick
1/2 cup breadcrumbs or bread diced into small cubes
1 or 2 cloves of garlic, minced
1 T butter
1 cup shredded cheese (mozzarella, gruyere, parm, etc…)
Salt and Pepper to taste

Set oven to 400F.

Grease a small shallow baking dish. Lay 1/2 of the tomatoes in the bottom and season with salt and pepper.
In a frying pan, melt 1 T butter.
Add the minced garlic.
Cook until garlic is soft then add the bread. Toast in the butter, stirring often.
Put half the bread over the tomatoes. Top with some shredded cheese.
Repeat the layers with the rest of the ingredients.
Bake for about 12 – 15 minutes until the cheese is browned.

ALTERNATIVE: Remove the meat from the tomatoes, leaving just a thin bowl. Chop up the reserved tomato meat. Mix with the bread mixture and stuff in the tomato bowls. Top with cheese and bake. (As shown in the picture.)
