Weight Watchers Oven Fried chicken.

This was one of our favorite dishes when on Weight Watchers.

Preheat oven to 375 F.
Spray jelly roll pan with non-stick spray. (I lined it with aluminum foil first.)

3 bone-in, skinless chicken breasts, cut in half.
(Can also use other cuts if you are not cutting calories)
Stir together 1/3 cup fat-free (or low fat) mayonnaise,
1 tablespoon Dijon mustard, 2 garlic cloves (minced),
1/2 teaspoon salt
1/2 teaspoon pepper
1 Tblsp or more hot pepper sauce (I use Cholula).
3/4 cup corn flakes

Mix mayo, mustard, garlic, salt, pepper, and pepper sauce together.
Take chicken breasts and coat with the mayo mixture.
Take corn flakes and crush them in a gallon sized ziplock bag.
Toss the chicken pieces a couple at a time in the crumbs and put on the tray. Once they are all breaded, spray with cooking spray and bake for approx 35 min.
