A delicous way to use leftover rice if you don’t want to make fried rice. These can also be made sweet.
Ingredients
2 cups cooked white rice — cold/leftover works best
1 cup all-purpose flour
1 tsp baking powder
½ tsp salt
½ tsp black pepper
½ small onion, finely minced
1 egg
¾ cup milk or buttermilk
2–3 tbsp bacon grease, lard, or oil for frying
Instructions
Mix the batter
In a bowl combine cooked rice, flour, baking powder, salt, pepper, and minced onion.
Add egg and milk or buttermilk. Stir until a thick, scoopable batter forms.
Heat bacon grease or oil in a skillet over medium heat.
Drop ¼-cup scoops into skillet and flatten slightly. Cook 3–4 minutes per side until deep golden and crisp.
Drain and serve hot.
