Beeftekia (Greek Meatballs and Potatoes)

For the meatballs:
1 1/2 lb of ground beef (I used a mix of beef, pork and veal.)
1 medium onion
1 clove of garlic
3 tbsp of bread crumbs
1 tbsp of dried mint
1/4 cup of chopped Italian parsley
Salt and Pepper to taste
1 tsp paprika
1 tbsp olive oil

For the sauce:
2 cups vegetable or chicken stock
2 cups of tomato sauce
1 tsp paprika
1 tsp thyme
Salt and pepper to taste
Potatoes:
4 russet potatoes peeled and cut

Instructions:

  1. Chop the onions and garlic in a food processor with the olive oil
  2. Add the mixture to the bowl with the meat with the remaining ingredients for the meatballs.
  3. Mix by hand and make your meatballs .. approx 12
  4. Mix all the ingredients for the sauce together
  5. Lay the potatoes at the bottom of casserole
  6. Add the meatballs on top of the casserole
  7. Pour the sauce over everything making sure the potatoes are covered.
  8. Cover and cook at 450 degrees Fahrenheit for about an hour or until the potatoes are fork tender.
  9. Let sit for 20 – 30 minutes out of the oven to cool a bit.
