Peanut Butter Noodles for One

Sounds weird, but these are delicious and easy to make. Double or triple the recipe for a fun dinner date dish.

1 T oil
1/4 – 1/2 lb ground pork
pinch of salt
3 green onions, sliced, white and green parts separated
2 cloves of garlic, minced
2 T peanut butter
Splash of soy sauce
Splash of rice vinegar
Juice of 1 lime
Chili Crisp to taste
Fresh noodles of your choice

Heat a skillet or wide saucepan over medium high heat and add the oil.
Once the oil is hot, add the ground meat (pork, chicken, beef, whatever) and the salt. Let it cook down while you cut the onions and garlic.
Break up the meat and add the onion white and garlic.
Add the peanut butter, soy sauce, vinegar, and lime juice.
Add a splash of the hot water you are heating for the noodles. The mixture should be a bit wetter than what you want the final sauce to be. It will thicken as it cooks.
Add the chili crisp.
Cook the fresh noodles until cooked then add to the sauce.
Stir it all together and pour to a serving dish.
Top with the onion greens.
