For the meatballs:
1 1/2 lb of ground beef (I used a mix of beef, pork and veal.)
1 medium onion
1 clove of garlic
3 tbsp of bread crumbs
1 tbsp of dried mint
1/4 cup of chopped Italian parsley
Salt and Pepper to taste
1 tsp paprika
1 tbsp olive oil
For the sauce:
2 cups vegetable or chicken stock
2 cups of tomato sauce
1 tsp paprika
1 tsp thyme
Salt and pepper to taste
Potatoes:
4 russet potatoes peeled and cut
Instructions:
- Chop the onions and garlic in a food processor with the olive oil
- Add the mixture to the bowl with the meat with the remaining ingredients for the meatballs.
- Mix by hand and make your meatballs .. approx 12
- Mix all the ingredients for the sauce together
- Lay the potatoes at the bottom of casserole
- Add the meatballs on top of the casserole
- Pour the sauce over everything making sure the potatoes are covered.
- Cover and cook at 450 degrees Fahrenheit for about an hour or until the potatoes are fork tender.
- Let sit for 20 – 30 minutes out of the oven to cool a bit.
