Also known as “Jailhouse Rolls”.
1 c mashed potatoes
2 sticks butter
3 eggs
7 cups AP flour
1 ½ tsp salt
1 c sugar
1 ½ c lukewarm water
1 ½ pkg active dry yeast (2 – 2 ½ tsp)
Mix yeast in lukewarm water. Stir and set aside for later use.
Mix potatoes, butter, eggs, salt, and sugar and then blend into the flour.
Add the yeast water and blend well. Place the dough into a greased bowl and cover with a cold damp cloth.
Place the bowl in the refrigerator until ready to use.
Roll out the dough to around ½ inch thick then use a biscuit cutter to cut circles of the desired size.
Butter the tops with melted butter and let rise for several hours.
After three hours or so, heat oven to 450F and bake for around 10 minutes.
Makes a dozen 3-inch rolls or 18 2-inch.
