Sweet Potato Biscuits

Sweet, savory, easy. The secret is to be very gentle with the dough. Don’t overwork it and also, when you roll it out, lift up the dough and allow it to shrink in and settle. Otherwise they can come out a bit tough.

1/2 cup mashed sweet potatoes
1/2 cup sugar
1/2 cup butter
2 tablespoons milk
3 1/2 – 4 cups flour
1 teaspoon salt
4 1/2 teaspoons baking powder
1 tablespoon cinnamon

Mix together the sweet potatoes, sugar, butter, and milk in a large bowl.
In a separate bowl combine 3 1/2 cups flour, salt, baking powder and cinnamon. Blend the flour mixture in with the sweet potato mixture.
Knead until the mix doesn’t stick to your fingers, adding more flour or milk if needed.

Roll out the dough on a floured counter to about 1/2″ thickness.
Cut out the biscuits and place on a greased cookie sheet.
Gather up leftover dough and carefully roll out again and cut out more biscuits. Remember to be gentle, the more you work the dough the tougher the biscuits will be.
Bake in a 400 degree oven on the middle rack for around 14 minutes.
