Doner Kebab

Beloved Greek street food that is now popular all over the world.

1 lb ground beef
1 lb ground lamb
1 medium grated Onion for moisture
1/3 cup Greek yogurt
2 T Extra virgin olive oil
Paprika, Cumin, Oregano, Coriander, Salt, Pepper

Place all ingredients into a large bowl. Mix well (the best tool for this is your hands), place 1/4 of meat mixture between two sheets of parchment paper and roll with rolling pin until it is very thin and to all edges. Remove top parchment and, starting from the thin side, fold/roll the meat into logs. Place rolls, still wrapped in the paper, on baking sheet and bake at 400 F for 30 minutes draining grease halfway through. Peel off paper. If you want it browner, back in oven for five more minutes.

Serve either with rice or in pita bread with tzatziki sauce, onions, tomatoes, and cucumber.
